Hi my name is Cindy & I am an olive lover…these 2 recipes were in Calgary’s Swerve Magazine a week ago. Very easy & super Yummo!

ROASTED CHICKEN WITH LEMON, POTATOES AND OLIVES

Preheat the oven to 375˚F. Arrange 8-10 skin-on, bone-in chicken thighs (I used chicken breasts, each cut into 3 pieces) in a cast iron skillet or baking dish. Cut 2-3 medium thin-skinned potatoes into 1-inch pieces and arrange in the dish around and in between the chicken pieces. Drizzle with olive oil, sprinkle with chopped fresh rosemary and/or thyme and salt and pepper. Roast for an hour, turning the potatoes once or twice, then remove the pan from the oven and add 1 cup green or black olives (I used green), scattering them over the chicken and potatoes. Cut a lemon into wedges and tuck them among the chicken pieces. Baste everything with the juices and return to the oven for another 30 minutes, until the chicken is golden and cooked through. Serves 4-6.

ROASTED FETA WITH OLIVES

Place a chunk or two of cow or goat’s milk feta in a small ovenproof skillet or baking dish, and arrange green and black olives around it. Drizzle everything with extra-virgin olive oil and sprinkle with grated lemon zest, fresh thyme, a pinch of red chili flakes and a grind of black pepper. Broil for 5-7 minutes, until the cheese is starting to turn golden and everything is warmed through. Serve with pita chips or fresh baguette.
K, my love for olives is equal to my love of cheese….I know a shiny headed man that would love this one. Do you know who you are….wink, wink.
